Recent studies reveal that bacteria found in artisanal cheeses could be beneficial for human gut health. These resilient microbes thrive within the cheese’s complex protein and fat structure, with frequent sightings of Lactococcus lactis and Streptococcus thermophilus. Additionally, the rind of certain cheeses contains prebiotic fibers, which nourish the gut’s native bacteria. Remarkably, the aging process enhances microbial diversity while nearly all lactose is removed.
